Lovely day with only one minor smudge on it today
Just before going to babysit, I made a great snack! I usually get plain Greek yogurt because I love the tart taste, but on a whim I got the vanilla this time and tried it out finally. I still like tart the best but it was a good change

1/2 cup TJ's 0% vanilla Greek yogurt; 2 tbsp naturally sweetened granola; strawberries & blueberries

Babysitting was more of a repeat of Tuesday than Wednesday and the kids and I had some major issues. The girl, Mason, and I were able to reason with each other a lot more and she apologized, listened, and we started to get along better. She is mostly just antagonized by her brother, Ethan. He’s the real cause of the problems. I’ll give them some more time, I’m hoping we’ll all finally get used to each other soon and they won’t think that they can walk all over me (like the very clearly did to their old babysitter). During all the commotion, I may have had a York Peppermint Patty that went un-photographed!
When I got home I just vegged out on the couch for a while. But I had a fun surprise waiting for me in the mail that hopefully will make it on the blog tomorrow! Keep your eyes peeled.
If you remember, I was having strong food cravings today and one was EGGS. Instead of making a boring fried egg dinner, I decided to be a bit more creative and make egg foo young. Now I’m sure I could have bought brown rice or made do with the Kashi pilaf I have, but there is something about Chinese food that REQUIRES white rice!
For the egg foo young, I sautéed the onion and mushrooms with cooking spray and scrambled 1 egg + 1 egg white and 1 tsp low-sodium soy sauce. Once the onions and mushrooms were ready, I poured in the scrambled egg and let it cook. It lost its pretty shape transferring from the pan to the plate, but seriously it tasted pretty similar to what I would get at a Chinese restaurant. And healthier!
I wanted to continue today’s theme of epic food with an epic dessert. Decadent for me, but when compared to something you’d get at DQ, it is way healthier and a lot more natural!

1/2 cup Purely Decadent coconut milk vanilla bean "ice cream" with 1 No Pudge brownie (made with applesauce) and a few of TJ's dark chocolate pomegranate seeds
I am such a lightweight! After that 1 glass of wine I am literally falling asleep as I type! I might close my eyes for 10 minutes before “Project Runway” but I’m NOT going to bed yet! Too early!
Fun news: Going to DC Saturday with Mona and Jeff to see Harris’s last concert with his a capella group!! Since he’s graduating, it is their last show and he’s been in it since freshman year. Should be a great show, and Jeremy is coming too! This weekend will be lots of fun DC eats
More fun news: On a whim decided to run a 5k on Saturday morning (heading to DC afterwards). I can’t do the 10k I want to do since I’ll be in Austin, so I just signed up! No real goals except to be faster than last time. Even if it is only by 2 seconds, I will have accomplished SOMETHING!
