Today was a day of good eats
I had a super tasty afternoon snack, thanks to Kashi and Oikos! Remember that package in the mail I got from Kashi a few days ago? Well my plans to incorporate it into meals kept being derailed so I finally used it!
The Kashi sample was awesome — between the fiber & protein in that and the protein in the Oikos I was full all afternoon. And that is a good thing because I spent my afternoon folding graduation announcements, stuffing envelopes, and addressing said envelopes. I have some extras — anyone want one??
I did technically (officially) graduate in December, but my university is too small to have a separate graduation ceremony so I’m walking in the May ceremony… which I think is best since I’ll be with my friends.
After a full afternoon, Mona texted me and told me that we were “Having Thai for dinner. Are you interested?” AM I INTERESTED? Next to (real) Mexican, Thai is my favorite type of cuisine.

I am so glad I tried a new dish! I am so in love with Thai curry, Pad Thai, and Pad See-Eaw that I very rarely venture away. But the curries all have coconut milk which is a little heavy, so tonight I opted to be adventurous. Also, I really wanted to add some more veggies in my life.
This was perfect — SPICY and light. The sauce was amazing, not heavy like I expected. I had about 1 cup of jasmine rice along with this and finished almost all of it. I ended up not bringing home the leftovers since I’m leaving for the weekend tomorrow morning and wouldn’t be able to finish it until Monday (ew). However I am now nurturing a Thai food baby and will definitely NOT need dessert. It was so good, but now I am SO FULL. Mmmm Thai food.
Off to watch Jamie Oliver’s “Food Revolution” and pack for the weekend. Leaving tomorrow morning and heading to Liberty Farm, my family farm owned by my uncle and aunt, the gourmet chef. My French family (who own a vineyard and make champagne… in Champagne, France) is coming into town and I’m going to see them for Easter!!!! Harris is coming too
