This evening went well! Sophie was exhausted so she slept while I did some laundry and sent some emails.
When Mona got home, we both knew that the eggplant in the refrigerator was on it’s last leg, so we combined my love for grilled veggies with a recipe she already had and we created something amazing. I give you: Grilled Vegetables and Goat Cheese Salad (now in my RECIPES tab!) I had it along side a veggie burger on a new Flat Out Multi Grain wrap. The wrap was great, except I wasn’t too thrilled about the sugar alcohol in the nutrition stats. Alas, it was only a wee bit. Lots o fiber!
Grilled Veggies & Goat Cheese Salad (Serves 4)
Use any vegetables you prefer, and if you don’t have access to a grill, you could roast them in the oven)
1 eggplant
2 medium summer squash
1 T olive oil
salt, pepper
1/2 cup crumbled goat cheese
1/4 cup toasted pine nuts (buy pre-toasted or do it yourself)
2 T balsamic vinegar
Set the grill on medium heat. Cut the squash and eggplant into chunks or large strips. Place in a bowl and coat with olive oil, salt, and pepper. Using a grill pan or basket, place the veggies on the grill and let grill until tender (about 10 minutes, stirring occasionally). Once they are finished, place in a bowl and add the toasted pine nuts, goat cheese, and balsamic vinegar and mix thoroughly. Once the cheese is melting and incorporated into the mix, serve! It is best hot!
This kept me really, really full. In fact I probably should not have eaten dessert. However I knew that I had the new non-dairy ice cream in the freezer I bought last week and I really wanted to try it! I decided to keep it small but still have some!
If you recall, I’ve tried 2 types of non-dairy “ice cream” so far, including Purely Decadent’s soy-based vanilla. I also really like TJ’s chocolate soy creamy. However, this baby blew those two out of the water. Dear sweet baby Jesus (Ricky Bobby anyone?). I will definitely buy the soy-based varieties again, but this stuff is amazing!!!! It has a higher fat content than soy-based and has been harder to find. Oh and there are more flavors available in the soy-base. But the coconut flavor really comes through, in a good way, and I need to be careful or I could eat the entire pint in one setting.
