new recipe!

This evening went well! Sophie was exhausted so she slept while I did some laundry and sent some emails.

When Mona got home, we both knew that the eggplant in the refrigerator was on it’s last leg, so we combined my love for grilled veggies with a recipe she already had and we created something amazing. I give you: Grilled Vegetables and Goat Cheese Salad (now in my RECIPES tab!) I had it along side a veggie burger on a new Flat Out Multi Grain wrap. The wrap was great, except I wasn’t too thrilled about the sugar alcohol in the nutrition stats. Alas, it was only a wee bit. Lots o fiber!

Veggie burger on Flat Out wrap with Grilled Veggies & Goat Cheese Salad

Flat Out Multi Grain wrap, TJ's tofu burger, vegan cheese, spinach, tomato, ketchup

Grilled Veggies & Goat Cheese Salad (Serves 4)
Use any vegetables you prefer, and if you don’t have access to a grill, you could roast them in the oven)
1 eggplant
2 medium summer squash
1 T olive oil
salt, pepper
1/2 cup crumbled goat cheese
1/4 cup toasted pine nuts (buy pre-toasted or do it yourself)
2 T balsamic vinegar
Set the grill on medium heat. Cut the squash and eggplant into chunks or large strips. Place in a bowl and coat with olive oil, salt, and pepper. Using a grill pan or basket, place the veggies on the grill and let grill until tender (about 10 minutes, stirring occasionally). Once they are finished, place in a bowl and add the toasted pine nuts, goat cheese, and balsamic vinegar and mix thoroughly. Once the cheese is melting and incorporated into the mix, serve! It is best hot!

This kept me really, really full. In fact I probably should not have eaten dessert. However I knew that I had the new non-dairy ice cream in the freezer I bought last week and I really wanted to try it! I decided to keep it small but still have some!

Purely Decadent Coconut Milk Vanilla Bean non-dairy ice cream

1/2 cup coconut milk Vanilla Bean with TJ's dark chocolate pomegranate seeds

If you recall, I’ve tried 2 types of non-dairy “ice cream” so far, including Purely Decadent’s soy-based vanilla. I also really like TJ’s chocolate soy creamy. However, this baby blew those two out of the water. Dear sweet baby Jesus (Ricky Bobby anyone?). I will definitely buy the soy-based varieties again, but this stuff is amazing!!!! It has a higher fat content than soy-based and has been harder to find. Oh and there are more flavors available in the soy-base. But the coconut flavor really comes through, in a good way, and I need to be careful or I could eat the entire pint in one setting.

Now I’m going to go put my food baby to bed :) Night!

belated case of the Mondays

Since I was out of town for a holiday (Passover) yesterday, today feels like a Monday!

I set my alarm to get up and run, but when I awoke to light rain and a sore throat, I called that off and went back to sleep. My health is more important than getting a run in! When I woke up for the second time, my nose was also a bit congested, but at least I felt rested.

1 container Oikos 0% vanilla; 2 Organic Weetabix biscuits; 1 slice organic cantaloupe

Breakfast was an organic bonanza!! (Oikos is organic, if you were wondering). The cantaloupe was amazing. I don’t think they’re quite in season yet, but this one was great!

At work I spent the morning catching up on filing and case discoveries that had stacked up in my absence. After working hard at my desk all morning, I suddenly noticed my hunger and had apparently been oblivious to it for a while because I was ravenous.

This was the last of the amazing farmer’s market sweet pataters :( However, this just gives me reason to go and seek out more! The nutritional yeast was perfect – 1 1/2 tbsp (a serving) has 8g of protein – the same as a serving of skim milk! I had almost a whole serving and though some flakes were flying around my desk as I ate, most of it incorporated well with the hot sweet potato and they took on a nice nutty, cheesy flavor. Oh and clearly I didn’t get enough matzo yesterday

After lunch I had the awful lovely task of taking all the books off 2 bookshelves in the conference room, moving the shelves into another office, and restacking all the books. Thankfully I had someone to help me move the giant, oak book shelves, but those books are heavy!! Picture giant law dictionaries and text books and that is what I lugged around for an hour today. I think my arms got a good work out!

I had the remainder of my trail mix that I packed for my weekend travels, which I really didn’t eat a lot of while on the road. But it made a great fueling snack today!

After work, I headed to the pool for a quick swim. I swam 2500m in 35 minutes and then hopped out of the pool to go to the kennel and be reunited with Monster.

Sophie’s been at the kennel since Friday! I was out of town and Mona was in NYC, so Jeff put her in the kennel since he would be really busy and out of the house all weekend. And then yesterday, of course, we were all in Richmond for the Seder so I picked her up after work.

This kennel doesn’t have crates, it is like no other kennel I’ve seen before. It is basically a giant playroom for dogs, equipped with obstacle courses, slides, toys, and other dogs. Sophie always comes back EXHAUSTED! And her caretakers told me she was in the big dog room since she was too bored with the other puppies, naturally. She is passed out in the kitchen, but very happy to be reunited with me. I’m sure she’ll be happy to see her real parents, Mona and Jeff, tonight.

I also got a surprise in the mail!

My Kashi New Year sample!

I kind of forgot I ordered this (back in January!). You may remember the Kashi commercials for free samples to start off 2010 with healthy eating. Well I was already eating better, but who can resist a free sample? Order yours here! I decided to use it in my dessert tonight, so you’ll see which one I chose later :)

And post-swim, I was feeling hungry so I had some toast, which clearly wrestled with the toaster (but won).
