Hey everyone! Thanks for all comments I got about my blog victory from this morning (mostly via Twitter and Facebook, though everyone can comment on my blog, don’t just lurk!!). It is nice to have your support and enthusiasm
My day at the office was fairly standard, with one exception: NO SOPHIE!! The puppy was at the groomer and that made for a surprisingly efficient and quiet workday. Go figure!
For lunch, I heated up the leftovers from the “fried rice” I made last night. It made for good leftovers. Question: does anyone else think that raw brussels sprouts have a kind of horseradish-y taste?? They were only sauteed for a little while and were pretty much still raw. I’ve only ever eaten them roasted or in a dish with sauce, so I’d never noticed the flavor! I’m not complaining, though; I liked it!
When I left work, I picked up Devil Dog from the groomer and now she is a raging ball of fluff, but smells significantly better. She immediately tried to ruin her new cleanliness by digging holes in the backyard but I derailed those plans to the best of my abilities.
I had an amazing snack that kept me full for nearly 4.5 hours, that is huge for me! I am definitely trying to really concentrate on my hunger and recognize when I’m truly hungry vs. when I’m just “not full”.
It was so filling and like a great bowl of cereal minus the milk (which I don’t particularly care for, anyways). And the TJ’s creamy almond butter drizzles and spreads well so it feels like you’re getting a LOT compared to a hard blob. Ya know?
After an afternoon of interesting events, I wanted some comfort food. I’ve the box of Annie’s Homegrown Organic Shells & Real Aged Cheddar staring me in the face in the pantry for a while! If you remember, I got it from my local organic grocery co-op that I joined, The Organic Food Depot in Va Beach.
You think 1 cup isn’t a lot, then you measure it out and look on your plate and you’re like “Wow, that is a normal portion. Kind of big, actually.” I have a little over a cup of leftovers that I’ll eat later this week. The veggies on the side were a perfect addition to kind of mix in with the mac. I threw garlic, yellow squash, broccoli, tomato, and a HUGE handful of spinach into a pan with cooking spray and let it cook away. The spinach was added at the end and can we say “The great disappearing vegetable”??? I love how this cooks down, but it makes me feel like I haven’t actually eaten a lot of greens! Well, I think I still got my quota in for the day.
Undecided about dessert, but it might creep in later
