Wow, my Monday just kept right on dragging! After my last post I crashed on the couch to rejuvenate a little with the company of Food Network and then got myself together to do some laundry and get other odds and ends done. Sad face: the sweater I wore today (brand new, by the way) already lost a button in the wash. Ugh.
The spin class that everyone went to was a 90 minute class, so I started to get hungry and held myself over with a classic: naner + nut butter.
I swear its only a tbsp! I was shocked at how far it spread! Cold nut butter always spreads better on a banana, though, so I guess it just was highly spreadable? Regardless it was fantastic and it kept me for about 2.5 hours!
When everyone got home from spin we all started making our own dinners. I remembered that I had saved the broccoli stalk and leftover 1/2 zucchini from the other night when I roasted the veggies. I was such a smart girl and let them “marinate” in the fridge with some reduced-sodium soy sauce and hot pepper flakes. So I heated up a pan and threw them in with some tofu, red pepper, and pistachios. So good!

1 nectarine; 1/3 cup extra firm tofu, red bell pepper, zucchini, broccoli stalk, spinach, 1 tbsp pistachios, soy sauce, red pepper flakes, and sesame seeds.
Just realized dinner was vegan
After dinner we watched the end of “Dirty Dancing” (yes, I watched it yesterday too!) and hung out. It was boring and casual, but that’s what I like best after a long day! Taking Sophie to the vet really wiped me. The room we were in was super hot and I was in there for an hour with an anxious, whining puppy (she has white coat syndrome).
Harris told me that he was a little surprised to see chocolate on my blog so frequently! For those of you who don’t know, I used to really not care for chocolate. I’d pick a fruit dessert over chocolate any day (still might). I don’t like chocolate cake, but I do enjoy chocolate ice cream. However, I used to detest dark chocolate. Now, I really can’t stand white or milk, it is just a little too sweet. I suppose I would like it in small bits, but really I think I am starting to really prefer dark. I haven’t moved to the super dark (like 80% and above) but maybe I’ll get there! So Harris is partially credited with this because that boy likes some dark chocolate.
All that talk of chocolate made me want soy creamy, naturally.

1/2 cup TJ's chocolate soy creamy with 1 tsp homemade raspberry jam and some TJ's dark chocolate edamame.
Delish. Now I’m off to read and hit the sack. Hoping for a good run tomorrow. Nighty night!!
