I spent my post-oats morning/early afternoon reading and getting some important stuff done (like my taxes!). I was really craving my leftovers from last night so I decided to heat them up. I peeled and microwaved a sweet potato, mashed it up, and topped it with leftover vegetable vindaloo. Seriously, it got spicier overnight!!! I had a tiny bit of mint ice cream afterwards to calm my palate, but ooooooh it was good!
I just caught up on “The Office” and “Family Guy” on Hulu and now I am thinking about a nap! I confirmed plans with my cousin and we’re doing a “potluck” and movies at her friend’s apartment. Except no one in their friend group knows how to cook! So everyone is bringing their own take-out. I can’t decide what I’m going to get. Possible Chipotle since I’ve been craving guacamole since the other night where I didn’t get it. Or a sushi place! I saw one near my old gym that I could look into… we’ll see. I’ll sleep on it
Lunch:
1 medium sweet potato
~1 1/4 cup leftover vegetable vindaloo (veggies and lentils in a hot Indian curry sauce, basically)
