headache

I have a monster headache. It started about 5 minutes into 6pm spin class and is still going strong at 8:30pm. I took some Advil so I’m hoping that will kick in soon. Of course, that made for a super sluggish spin class. But I ran 3 miles this morning and got in 20 minutes of light weight lifting pre-spin, so I’m not sweating it, metaphorically speaking. Because I did sweat a lot during class.

After lunch, I got some reading done and played with the puppy aka MONSTER. She is seriously like a toddler. And she has this sneaky look in her eye that says “I know exactly what I’m doing and how much it annoys you. Mwahahah!” I also watched Oprah which was about diabetes. Very interesting stuff! I tried my hand at making home made granola/energy type bars and halved a recipe I found online. Apparently something in the chemistry was lost because they were a flop. They taste all right (need more vanilla or something) but they’re really thin and I’m not sure how I feel about the texture. I’m letting them sit in the fridge over night and I’ll try one tomorrow and see how I feel. I’ll keep on working to find a good recipe!

I forgot to mention that during my pedicure earlier I finished the last 2/3 of the Fiber One bar. This afternoon I had the remainder of the Greek yogurt (about 1/2 cup) mixed with Bare Naked Fit granola and a couple 60% dark chocolate chips. I also had one of my “bars” just before spin class.

Dinner:
1 1/4 cup leftover whole wheat spaghetti with sun-dried tomato and shrimp
1 tbsp light balsamic vinaigrette (mixed into the pasta to give it some extra flavor)
1 Babybel Light cheese
1 cup honeydew melon

So after catching up on blogs, icing my foot, and getting dressed to face the day, I decided on a trip to the grocery store. And then realized it was conveniently next door to a nail salon. I knew I only needed a few non-perishables (baked beans, sweet potatoes, dark chocolate!!!, and brown rice) so I decided that my foot deserved a massage aka a pedicure! I treated myself to a little pampering and brought along a book to keep me occupied while my feet were beautified. So cute now :)

I got home and clearly needed to use some of my new purchases so I made a super amazing lunch, packed with nutrition and quite tummy-filling. I microwaved a sweet potato and topped it with 1/2 cup vegetarian baked beans (stole this idea from a couple other blogs I read… genius!). While that cooked, I remembered how I needed to use up the kale and I didn’t like it cold the other day. I also realized that my lunch had no fat in it (the beans were fat free and obviously the sweet potato doesn’t) so I decided to experiment and “sautée” the kale with a tsp of BUTTER. I also put some garlic salt and pepper and stirred it around a pan with the butter to warm it and soften it a bit. It was perfect. Salty but savory from the butter, still full of nutrients since it wasn’t overcooked, and just a little crispy in places from the pan. I’m remembering this one!

Lunch:
1 medium sweet potato
1/2 cup vegetarian baked beans
1 cup kale
garlic salt, pepper
1 tsp butter

Does anyone else play the piano on your steering wheel while driving?? Not that I even KNOW how to play a piano, but whenever Billy Joel is on I just can’t help playing along. Today most of my drive way “Scenes from an Italian Restaurant” and there are some good piano sections in the middle. I’m sure I looked ridiculous, but I enjoyed myself. Gotta love Billy!!!

No work today so I tried to sleep in and catch up on sleep. I took melatonin last night (1 mg) and was OUT like a light moments after hitting the pillow. I slept soundly until 3:43am. Weirdly I’ve been waking up between 3:30 and 4am, and usually I have trouble falling soundly asleep again. Well last night (this morning?) I actually fell back asleep after a few minutes and was awoken at 8am by the contractors coming to take some measurements. Mona & Jeff are re-doing the upstairs bathroom, aka my bathroom, so next week it will be morning gym & showers! At least its a good way to get my butt to the gym bright and early. I ended up heading out to the gym and getting in a good 3 miles on the treadmill. My foot is feeling better thanks to rest and ice and it is only twinging a bit now. So I think I’ll keep resting, icing, and gradually building up the milage with plenty of recovery in between for the foot.

I had 1/3 of a Fiber One bar before the gym (meant to be a half, but I broke it unevenly and didn’t want too much) and when I got home I cut up the honeydew that has been sitting on the counter for over a week now. SO GOOD. Are these things in season now? I assumed they were a summer fruit and was waiting for it to be so-so.

Breakfast:
1 egg

2 wedges of honeydew (about 1/8 of the whole melon)
